Fan & convection ovens

Convert any recipe for a convection oven

Enter the recipe's oven temperature and time and what you're making. FanBake gives the convection setting – lower the temperature, shorten the time, or both – and when to start checking for doneness.

What makes a convection oven different

A convection oven uses a fan to circulate hot air around the food. Moving air transfers heat faster than still air, so food cooks more quickly and browns more evenly, and you can bake on several racks at once. True convection (also called European or third-element convection) has a heating element around the fan for the most even heat; fan-assisted ovens just move the air heated by the top and bottom elements. Many countertop ovens and combi steam ovens also have a convection mode.

    The conversion rules

    Lower the temperature by 25 °F (about 15 °C) – or – keep the temperature and cut the time by 20 – 25 %

Which rule to use depends on the food. For baking, lower the temperature and keep the time, so cakes and breads rise before the crust sets. For roasting meat and vegetables, keep the temperature and shorten the time: the browning is welcome and you save time. For cookies and pastries a combination works well. Many modern ovens have an automatic "convection conversion" that lowers the temperature for you – check the manual so you don't convert twice.

    Tips

Buying a convection oven or range

Look for true (third-element) convection, a convection roast mode, accurate temperature control and good interior lighting. Countertop convection ovens and air fryer ovens are an energy-efficient choice for small households and add capacity during holidays.

    Frequently asked questions

How do I convert a recipe to a convection oven?

For baking, lower the temperature by 25 °F (15 °C) and keep the time. For roasting, keep the temperature and reduce the time by 20 – 25 %.

Is 350 °F conventional the same as 325 °F convection?

Yes, for most baking. Check a few minutes early the first time.

Should I use convection for cakes?

Many cakes bake well on convection at a lower temperature, but very delicate cakes and cheesecakes are better on the regular setting.

    Does convection cook faster?

Yes. Moving air transfers heat faster, typically cutting roasting time by about 20 – 25 %.

    What is true convection?

An oven with a third heating element around the fan, which gives more even heat than fan-only (fan-assisted) convection.

    About FanBake

FanBake is an independent, free conversion calculator for convection, fan-forced and true-convection ovens, based on widely used manufacturer and test-kitchen guidance. Ovens vary, so check doneness early. We are not affiliated with any oven manufacturer.

Every formula on this page runs entirely in your web browser. The numbers you type are never uploaded, stored or shared. Our goal is simple: give you an honest starting point so you can compare product specifications with confidence and avoid paying for capacity you do not need – or buying something too small to do the job.

The methodology combines widely published engineering rules of thumb, manufacturer data sheets and the electrical code practices that installers use every day. We review the assumptions regularly and update the calculator when typical product specifications change.
